If you don’t have a double boiler, use a metal mixing bowl over a sauce pot of water. Just make sure you wear a good mitt to hold onto the bowl while stirring the melting chocolate. TIP: and make sure your bowl is wider than the pot so it doesn’t get stuck inside the pot. I did this the first time and nearly burned myself trying to get them apart for licking cleaning.

Also, you can add more nuts or more raisins depending on your preference. If you want more chocolate left over in the pan afterwards (for licking of course), then use less nuts and raisins.

1 bag of vegan chocolate chips
1  1/2 c. cashews
1  1/2 c. raisins

  1. Melt the chocolate over water.
  2. As soon as it’s melted, stir in the nuts and raisins to coat.
  3. Spread sheet of waxed paper and spoon out mounds to cool.
  4. After cooling thoroughly, store in a cool place.
