Honestly, this is so easy you can’t go wrong. Just don’t forget the mustard or it won’t have any punch.

4 potatoes
1 to 1  1/2 c. vegan mayo
3 T. mustard
3 spring onions chopped
2 celery stalks chopped
2 T. dill, fresh is better if you’ve got it
salt
pepper

  1. Boil potatoes until soft.
  2. Drain and rinse in cold water.
  3. In large bowl, mix all other ingredients well.
  4. Add potatoes and toss to coat.
