I made some AWESOME succotash over the weekend for use in our bentos. Also made a colorful stir fry but I didn’t like it enough to write down the recipe.

So, back to the succotash…there are actually two versions here. They are seasoned differently but started out with the same base ingredients. Check out the recipe for details and close ups of the final results.

In the meantime, here are today’s bentos.

Mine

  • Stir fry with fried tofu
  • Succotash Asian Style with Kimchi Furikake
  • Asparagus spears with spicy cashew dip
  • Little containers of chopped onion and soy sauce

I also bought my husband a new bento box at Mitsuwa this weekend.

Hubby’s
