This is not my own recipe but gosh darn it, I had to use up those carrots (see previous post). I was craving cookies and went to my old faithful and seriously dog-eared cookbook, Vegan with a Vengeance. Isa has an awesome recipe for pumpkin oatmeal cookies on page 198 and I thought, why couldn’t I substitute carrots for the pumpkin. I know, I know. You’re thinking GROSS, right? Actually, they are very yummy and moist. DH scarfed 5 of them during Desperate Housewives.
Here’s proof that they look like normal oatmeal cookies, as for taste, you’ll just have to trust me that they’re yummy even with carrot puree:
All you have to do is go to page 198 of Isa’s Vegan with a Vengeance and substitute 1 cup of pureed carrots for the pumpkin. All else is the same. I didn’t even cook the carrot first. Oh wait, I did use pecans instead of walnuts. I like the sweetness of pecans.
Note about taste and texture: Can’t really taste the carrot because of the spices but that’s ok. The carrot does make these a tad more moist than regular oatmeal cookies and they don’t get too hard after 3 days. And adding a veggie like pumpkin or carrots gets more vitamins in your cookies. That gives me an excuse to eat them for breakfast!

I know I am crazy but I would rather eat a carrot cookie than a pumpkin cookie! Thank you for giving me this inspiration.

Not a bad idea. I never would have thought of that. I bet it does taste good though. They look good.
And who says cookies aren’t breakfast food? Lol.
