I dare say anything can be made awesome with avocados! It’s really hard to go wrong with something like this little relish and you can use it with chips, on a burger, burrito, or as a side dressing. It’s not really a guacamole since there are so many veggies but it’s still really yummy.
Snarky Avocado Relish
- 1 ripe avocado, chopped
- 1 red pepper, chopped
- 1/2 jalapeno, chopped really fine
- 1 roasted ear of corn, trim kernels into bowl
- 2-3 stalks green onions, chopped
- handful of chopped cilantro
- tiny splash of lime juice
- salt
Stir the avocado and lime juice in a bowl then add other ingredients. Stir gently. Serve at room temperature. Do not make in advance.
Alts: Try adding 1/2 c. black beans in addition to the rest. YUM!
So when you’re tired of guacamole or simply need something a little more substantial, throw in some veggies and grill them if you have the time. The grilling of the corn really deepens the flavors.

Avocados are next to godliness! (In fact, I just ate some smashed up avocado on toast for dinner, with a bit of olive oil, of course!)
